Bioethanol is the form of alcohol produced from naturally occurring feedstock such as wheat, sugar cane and sugar beet by the hydrolysis and sugar fermentation processes. In this research, wheat germ was used to produce bioethanol by fermentation with local made yeast (ragi). The highest amount of bioethanol obtained by comparison between wheat germ (30 g) and media YDP was 0.603 g/L and 0.241 g/L at 16 hours both flasks. Production of bioethanol by wheat germ twice higher than media YDP. Yeast released glucoamylase to catalyses the hydrolysis of α-1,4 glycosidic bonds in starch for wheat germ. Therefore experiment was done to show highest enzyme activity obtained was 19.45 u/ml at the highest amount of bioethanol produced.
