Coconut Meat Shake (CMS) is made from the flesh of a young green
coconut. The coconut meat shake (CMS) is loaded with minerals which are
an essential electrolyte; vital for the cells to carry electrical impulses across
other cells to avoid dehydration during heavy exercise, hence will help to
delay the onset of muscle fatigue. It is also rich in carbohydrates, proteins,
minerals such as potassium, calcium, phosphorus, iron, iodine, chlorine,
magnesium as well as various vitamins including vitamin B1 (Thaimin), B2
(riboflvin) and B5 (penthatonic acids). The coconut meat shake (CMS) can
be used to make into various form of energy food for competitive athlete in
endurance training as it contains the main components in the diet. The
carbohydrates content supplies the energy source and proteins for muscle
repair. The mineral acts as electrolyte and the vitamins involved in the
carbohydrates metabolism to produce energy. The process that has been
developed, converting the coconut flesh to coconut meat shake (CMS) by
homogenizing process. The uniqueness of the coconut meat shake (CMS)
is that athletes have the alternative of consuming the shake (CMS) as their
replacement for sport drinks and energy bar to enhance their performance
which is much cheaper as well as organic in nature. The utilities of the
product will enhance the socio-economics of the rural community in the
coconut industry which could provide extra income. The product has a
potential for commercialisation through the sales of the shake (CMS) as an
ergogenic food for endurance athletes. |
