Pumpkin fruit is one of the widely grown vegetables in the tropics. It is a low
calorie, salt and saturated fat vegetable incredibly rich in vital antioxidants,
and vitamins containing vitamin A, flavonoid poly-phenolic antioxidants such
as leutin, xanthin, and carotenes in abundance, Vitamin E (Alpha
Tocopherol), Thiamin, Niacin, Vitamin B6, Folate, Iron, Magnesium,
Phosphorus, A, Vitamin C, Riboflavin, Potassium, Copper and Manganese. It
is a very good source of dietary fiber. Pumpkin Cracker Flour is made from
the pumpkin flesh and seeds containing all the ingredients to make crackers
for healthy snacks. This inventive product when commercialized will increase
the demand of pumpkin which can be easily cultivated by the rural
community. It also gives added-value to the pumpkin which is perishable.
The production of the special pumpkin cracker flour can be done by setting
a cottage industry for the womenfolk therefore and can generate income to
the rural community.
