FIM is the suggested trade name for Flavoured Ikan Masin which is naturally
prepared to enhance taste and texture of salted fish. Usually, flavours, such
as lime juice or chilli are added to the cooked salted fish before eating to
enhance the taste, thus requiring extra time to prepare the dish. The
standard procedure of the process of making flavoured salted fish with
sweet, sour and spicy ingredients incorporated to the conventional process
of making salted fish has been developed. Quality control of the flavoured
salted fish is also assured based on microbial assay and heavy metals
contents. To the consumers, less time is needed to prepare a more
delicious and appetizing dish. This innovative process will add value to the
salted fish and therefore increase its market price. This new product can
increase salted fish market variety, thus can generate extra income to the
producers from the cottage industry.
